Chemex Coffee

The Chemex is half brewer, half sculpture — and the cup it produces is just as refined. Clean, bright, and surprisingly forgiving once you find your rhythm. This is the brew you make when you want to slow down and actually taste what's in your cup.

All You Need

  • Brew time 4:30–5:30 minutes
  • Grind size Medium-coarse
  • Coffee dose 36–46 g
  • Water amount 600 g

  • Chemex filter paper
  • Gooseneck kettle
  • Digital scale
  • Timer
  • Mugs or server

Brew Method

1 Heat 600g of water to 90–99°C and grind 36–46g of coffee to a medium-coarse consistency.
2 Open the Chemex filter so three pleats face the spout. Rinse with hot water, discard the rinse water, add ground coffee and gently shake to level.
3 Start your timer. Bloom by pouring in a slow spiral from center outward until the scale reads 80g. Let the grounds rest for 45 seconds.
4 At 45 seconds, begin your first pour in a controlled spiral — center out and back in — until the scale reaches 300g. Aim to finish by 1:00.
5 Continue pouring in rounds: at 1:20 pour to 400g, at 1:50 pour to 500g, at 2:20 pour to 600g total. Maintain a steady spiral flow throughout.
6 Allow all water to fully draw down (total brew time: 4:30–5:30 minutes). Remove the filter and pour into mugs.
