Vietnamese Coffee

No rush, no pressure — just gravity doing its thing. The phin is Vietnam's answer to slow coffee: a tiny filter, a few spoonfuls of ground coffee, and all the patience of a quiet morning. Worth every drip.

All You Need

  • Brew time 6–8 minutes
  • Grind size Medium-coarse (5–6 EK)
  • Coffee dose 25 g
  • Water amount 200 ml

Tools

  • Vietnamese phin filter
  • Kettle
  • Digital scale
  • Cup or glass

Brew Method

1 Add 25g of ground coffee into the phin filter. Place the press insert gently on top — no tamping, just resting.
2 Slowly pour 30ml of hot water (90–93°C) over the entire surface of the coffee to bloom the grounds.
3 Wait 2–3 minutes for the grounds to fully absorb the water and expand evenly.
4 Press the insert down gently, then pour 50ml of hot water into the phin. Close the lid.
5 Let it drip at its own pace — 4–5 minutes. Yield: approximately 40–45ml of concentrated coffee.
6 Add condensed milk, sugar, or ice to taste — or enjoy straight as a bold, clean concentrate.
