Hot over ice

All the clarity of a pour-over, served ice-cold without losing a thing. Brewing hot directly onto ice locks in the bright, vivid flavors that slow cold brew can't quite capture. Fast, refreshing, and a little bit clever.

All You Need

  • Brew time 1:45–2:15 minutes
  • Grind size Medium-fine
  • Coffee dose 20–27 g
  • Water amount 200 g

  • Digital scale
  • Timer
  • Carafe
  • Glass

Brew Method

1 Heat at least 250g of water to 93–99°C. Add approximately 75g of ice to a carafe and set the dripper on top.
2 Grind 20–27g of coffee to a medium-fine setting — slightly finer than a regular pour-over.
3 Add coffee to the filter and shake gently to level. Start your timer. Bloom with a spiral pour (3 laps out, 3 laps in) until you reach 50g on the scale. Aim to finish in 10 seconds.
4 At 40 seconds, begin your first pour in a spiral pattern (4 laps out, 4 laps in) until the scale reads 120g. Finish within 10 seconds.
5 At 1:10, begin your final spiral pour until you reach 200g total. Finish within 10 seconds.
6 Allow all water to pass through the dripper (total brew time: 1:45–2:15 minutes). The ice should be mostly melted — pour over a glass with fresh ice and enjoy.
